Once I've set up all tasks etc and my project is underway, is it then possible to insert additional tasks if there's anything I've forgotten to include at initial set up?

There is no limitation on what you can add after you have baselined your project

Any tasks you add will appear without a corresponding baseline. If they have successor tasks that already exist then the tasks of course might be delayed, causing a variance in the schedule.

If your new tasks are to be resourced, then this will also cause cost variances.

If the project has been baselined, but little or no progress made on the existing tasks, it might be better to remove the baseline, add the new tasks and then baseline the project again. This would include the new tasks in the baselined schedule and budget.
