how do I display the dates / times of all saved baseline views in the task pane.

You can't! Change to the Multiple Baselines Gannt view to see all start and finish dates or create a custom table incorporating the relevant Baseline fields, from which you can create a custom report.

Enter a Date

You can enter today's date (or tomorrow's date) in a date field, by simply typing in the word 'today'or 'tomorrow') and Project will insert the date for you.
