How do you pick out a text or characters within text or characters in a certain cell.

Thank you for your question.
There are other text functions available, have you tried using FIND?
For example, finding where is "W" within postcode "NW5 6JT"
=FIND("W", cell address)
The answer will show 2 indicating "W" is the second letter.
