Hi Stefania

Thank you for your question. To change the setting for all future messages in Outlook go to the Tools menu and choose options - from the Message Format tab set the format you require.

In a currently open message that you are writing you will find a format button showing one of the currently available format for you (i.e. Html, Rich text or Plain text) use this control to switch the format of your message.
