Hi Andrew, not 100% sure I understand the question but this is what I think you mean.
1) to add commands to to the quick access toolbar you click the black arrow at the right end of the bar and select "more commands", then select the command you want to click "add". Another way is to simply right click on a command on your ribbon and add it to your toolbar.
2) you can also customise your ribbon but going to excel options and "customise ribbon".
